Introduction

An electrostatic precipitator (ESP) for commercial kitchens is a high-efficiency air cleaning device that removes grease particles, smoke, and submicron aerosols from cooking exhaust using electrostatic attraction rather than mechanical filtration. As the cooking fume airstream passes through the ESP, particles are first given an electric charge in the ionization section, then drawn to oppositely charged collection plates in the precipitation section, where they accumulate until removed during the cleaning cycle. Unlike mechanical filters that become blocked over time and increase airflow resistance, a properly maintained ESP maintains consistent collection efficiency and stable airflow throughout its service life.

Yuede's kitchen electrostatic precipitator series is manufactured with 201 stainless steel housings and electrostatic field components, providing excellent corrosion resistance in the humid, greasy conditions of commercial kitchen exhaust. With purification efficiencies reaching 85–98% depending on model and cooking load, Yuede ESP units meet or exceed the emission standards specified in China's GB 18483 residential kitchen emission standard and equivalent international regulations for grease particle concentration in exhaust discharge.

Application

  • Commercial Restaurant Fume Purification: The most common application — ESP units installed in the kitchen exhaust duct to remove cooking grease particles before discharge, meeting GB 18483 or equivalent local emission standards that all commercial kitchens are required to comply with.
  • Hotel Kitchen Exhaust Treatment: Large hotel kitchens with multiple cooking stations producing diverse fume types (frying, wok, steam, grilling) benefit from ESP's broad-spectrum particle capture across the full airflow range of the kitchen exhaust system.
  • Integrated Purification Unit (Combined Hood + ESP): Yuede's integrated range hood units combine the exhaust hood, fan, and ESP in a single assembly — eliminating the need to specify and install these as separate items with separate duct connections.
  • Retrofit Fume Treatment for Non-Compliant Kitchens: Kitchens that need to achieve compliance with tightening local emission standards without replacing their entire ventilation system can add an ESP unit to their existing duct run as a standalone treatment device.
  • Food Court and Multi-Tenant Shared Exhaust Systems: A central ESP serving a shared exhaust riser provides economically efficient purification for multiple smaller kitchen tenants who cannot individually justify the cost of dedicated units.
  • Q: How often does an ESP need to be cleaned?
  • A: Cleaning frequency depends on cooking load and fume concentration. For a typical full-service restaurant, ESP cleaning every 2–4 weeks is recommended. High-load kitchens (wok cooking, heavy frying) may need weekly cleaning. Auto-clean ESP models can run a cleaning cycle daily or weekly automatically. The most reliable indicator is monitoring the ESP's discharge odor and visible plume — increased odor or visible fume at discharge indicates the collection plates are loaded and cleaning is needed.
  • Q: Is an ESP safe to operate in a commercial kitchen?
  • A: Yes, when properly installed and maintained. Yuede ESPs operate with high DC voltage internally but include multiple safety features: automatic power-off when any access panel is opened, overcurrent protection, arc detection circuits, and insulation failure alarms. The unit is fully enclosed in the duct and there is no risk of electric shock to kitchen staff during normal operation. Maintenance personnel must follow the lockout/tagout procedure before opening access panels for cleaning.
  • Q: Will the ESP cope with the high humidity in kitchen exhaust?
  • A: Kitchen exhaust is typically warm and moderately humid. Yuede ESPs are designed for this environment with collection plate spacing and high-voltage configurations that maintain performance in humid conditions. However, extremely high moisture levels (from steam-heavy cooking without adequate pre-filtration) can reduce collection efficiency by promoting conduction between plates. For steam-heavy kitchens, a water separator or demister pad upstream of the ESP is recommended.
  • Q: What is the difference between a kitchen ESP and an industrial ESP?
  • A: Kitchen ESPs are specifically designed for the characteristics of commercial cooking fume — relatively low temperature (40–80°C), high grease loading, high humidity, and frequent cleaning requirements. They use closer plate spacing and lower operating voltages than industrial ESPs designed for dry, high-temperature combustion gas treatment. Yuede's kitchen ESP models are optimized for cooking fume composition and include accessible cleaning features appropriate for routine kitchen maintenance staff rather than specialized industrial maintenance teams.
